This recipe is so simple with very minimal prep and clean-up time. It may not be the meal that my fellow health fanatics would approve of, but it's a meal that's satisfying none the less. As glorious as being a healthy vegan is portrayed, I still personally enjoy ooy-gooy calorie dense Mexican food, and there's nothing in the vegan hand book that says I can't have it! As a matter of fact, I think a well balanced vegan diet, with a few processed foods here and there, can be better and easier to maintain compared to a super strict vegan diet. The five main parts to this burrito, or shall I say soft taco for the sake of Taco Tuesday, are the tortilla, refried beans, the meat substitute that I pre-made, your choice of hot sauce, and a slice of Daiya cheddar cheese. For the meat substitute, I like the brands Boca and Gardein. Any other vegan meat substitute should work fine too!

Taco Seasoning
- I personally use my own seasonings at home to make 'taco seasoning'. If you're interested in a home-made taco seasoning, please let me know!

2 TB oil of choice
Let a pan with 2 tablespoons of oil come to medium heat. Cook vegan meat substitute as package suggests. Add seasoning 1 minute into cooking. It's as simple as that!
